like a home-made dinner! On more than one occasion, I've skimped on a fresh, home cooked meal and opted for something quick and simple that I can whip up in about 15 minutes. Such as pasta or rice with fake meat {we're vegetarians} or beans, served with some kind of vegetable. The only work that goes into it is throwing things into a pot to boil {or cook} and then scooping them onto everyone's plate.
So, since Lucy and Elliot have expressed a HUGE interest in their play kitchen, the food network and all tv shows about preparing food, and cooking in general, I figured it was time I start upping my game! So the past couple days we've been spending more time together in the kitchen. Baking cupcakes and cookies, cooking scrambled eggs and sandwiches, and tonight...we made home-made PIZZA!!
Lucy put on her little play apron, which definitely makes me want to pick one up for myself from etsy {my wishlist is here...yeah it's a lotta wish list!} I've never owned my own apron, but I have ALWAYS wanted one!!!
I made a little too much sauce, so the kids were chowing down on the leftovers from the saucepan...

Here's how we made it...
Dough for Crust
combine in bowl: 1 1/2c four, 1 package of yeast, 1/4 t. kosher salt, 1c. warm water, and 2T extra virgin olive oil. Mix together {by hand or with an electric mixer}, and slowly add approx 1c. flour until it turns into a nice dough ball. Cover and let rest for 10 minutes. Then roll out onto your pizza pan/cookie sheet.
Sauce {vegetarian}
In saucepan, on med-high heat, combine minced garlic {to taste...we like a LOT}, 1 package fake meat crumbles, 1/2 chopped onion, 1 can of drained petite diced tomatoes, 1 can of tomato sauce, 1 can of tomato paste. Then add the following seasoning to taste: kosher salt, freshly ground pepper, oregano, basil, parsley.
Put sauce onto pizza dough, and top with your faves! We chose cheese, yellow and red sweet peppers, and green onions.
Cook it for 15-20 minutes at 425.
